Det manuelle arbeidet er tidskrevende (og ikke minst kjedelig) og de fleste restauranter bruker lenger tid enn de tror p\u00e5 dette.<\/p>\n\n\n\n<p>Restaurantsjefene vi har arbeidet med vil gjerne gj\u00f8re hva som helst annet enn varetelling\u2026<\/p>\n\n\n\n<p>Kassetelling<\/p>\n\n\n\n<p>Oppvask&nbsp;<\/p>\n\n\n\n<p>\u2026 <em>hva som helst <\/em>annet enn \u00e5 g\u00e5 p\u00e5 lageret \u00e5 telle varer.<\/p>\n\n\n\n<p>Hvorfor vil de fleste slippe unna den manuelle varetelling i restaurante?&nbsp;<\/p>\n\n\n\n<p>Vi ser at det er flere grunner til dette.<\/p>\n\n\n\n<h2><strong>Mangel p\u00e5 organisering og kontroll<\/strong><\/h2>\n\n\n\n<p>Det \u00e5 komme inn til et godt organisert matvarelager hvor du vet hvor alle varene du har er, er en ting, men hvem har egentlig manuell kontroll p\u00e5 dette?&nbsp;<\/p>\n\n\n\n<p>En av grunnene til at manuell varetelling er s\u00e5pass tidskrevende er at du m\u00e5 organisere, rydde, og gj\u00f8re andre ting f\u00f8r du i det hele tatt kan starte med selve varetellingen.<br>Du m\u00e5 kvitte deg med varer som har g\u00e5tt ut p\u00e5 data, vaske hyller, sortere og gruppere ulike typer varer &#8211; alt dette f\u00f8r du i det hele tatt kan starte med selve varetellingen.&nbsp;<\/p>\n\n\n\n<h2><strong>Manglende system p\u00e5 utg\u00e5ende varer<\/strong><\/h2>\n\n\n\n<p>De fleste restauranter vet at FIFO-metoden er viktig for system p\u00e5 varelageret &#8211; First In, First Out. Men, dette g\u00e5r lett forbi b\u00e5de servit\u00f8rer, kokker og restaurantledelsen. I en tidspressende bransje som restaurantbransjen, vil en ofte bare ta tak i det f\u00f8rste en finner, og glemmer derfor lett dette. Servit\u00f8rer f\u00f8ler kanskje ikke at det er deres jobb eller ser ikke verdien for seg selv ved FIFO. Ledelsen derimot har ikke tid til dette, m\u00e5 hjelpe servit\u00f8rer og kokker i rushtiden eller har andre administrative oppgaver \u00e5 fokusere p\u00e5.&nbsp;<\/p>\n\n\n\n<p>Uansett hvilken grunn det er for at en ikke klarer \u00e5 f\u00f8lge FIFO, s\u00e5 resulterer dette i at store deler av restauranters varelager havner i s\u00f8pla, i tillegg til at det gj\u00f8r varetellingen i stor grad vanskeligere.&nbsp;<\/p>\n\n\n\n<p>Les mer her om hvordan restauranter kan redusere matsvinn <a href=\"https:\/\/totalctrl.com\/no\/blog\/reducing-restaurant-food-waste\/\" target=\"_blank\" rel=\"noreferrer noopener\">her<\/a>. <\/p>\n\n\n\n<h2><strong>Lite kunnskap hos ansatte<\/strong><\/h2>\n\n\n\n<p>La oss si at du som restaurantsjef har kontroll og organisert varelager godt, og f\u00f8lger FIFO-metoden. Men, du vet at du ikke klarer dette alene. Det er ofte mange nye servit\u00f8rer og ansatte som g\u00e5r ut og inn av restaurantbransjen, dette vil si at det er flere \u00e5 oppl\u00e6re etter ditt system og dine rutiner.<\/p>\n\n\n\n<h2><strong>Prisoppslag<\/strong><\/h2>\n\n\n\n<p>Etter du har organisert varelager og har skrevet ned alt du har p\u00e5 papir, s\u00e5 m\u00e5 du sl\u00e5 opp alle prisene. Du har sikkert flere hundre varer p\u00e5 varelageret og m\u00e5 se over prisen du betalte for hver og en av disse. Dette er ogs\u00e5 en tidskrevende og manuell jobb.&nbsp;<\/p>\n\n\n\n<h2><strong>Manuelle regneark<\/strong><\/h2>\n\n\n\n<p>Etter organisering, varetelling og prisoppslag &#8211; s\u00e5 m\u00e5 alt dette sl\u00e5s inn i et regneark p\u00e5 PCen, manuelt. Dette kan ofte gi flere feiltastinger noe som understreker hvorfor manuell varetelling er s\u00e5pass hardt og tidskrevende.&nbsp;<\/p>\n\n\n\n<h2><strong>Tidskrevende kalkuleringer og analyser<\/strong><\/h2>\n\n\n\n<p>Videre s\u00e5 m\u00e5 du ogs\u00e5 se p\u00e5 tallene for din restaurant og forst\u00e5 hva disse tallene betyr. Bruker kanskje kokken litt for mye av noen varer? Har noen varer forsvunnet?
